Cast iron pots are highly durable, maintaining an even and stable temperature, making it perfect for cooking meat. If they have an enamel coating, you can use them for cheese fondue too. But, cast iron pots aren't dishwasher or detergent safe, so they need a bit of extra care.
Ceramic casseroles are ideal for melting cheese and chocolate. They heat up gradually, and it's simple to adjust the heat to prevent any burning.
Stainless steel pots are best for fondue with oil or broth since they heat up quickly. If they don't have a non-stick coating, cheese and chocolate can burn easily. But, it's ideal for preparing fish, vegetables, and meat.
To melt chocolate, opt for a pot with a water bath, as this will heat the chocolate without burning it. Alternatively, you can place a tealight under the pot – it gives just the right amount of heat. Chocolate only needs to be warmed enough to keep it from hardening.
The most common types of fondue pots use classic burners that run on cooking fuel, ethanol, or gas. But, there are also fondue pots with electric burners. These are generally safer as they reduce the risk of fire. Classic burners may feel cozier, though. We recommend choosing a burner that allows you to adjust the heat to avoid burning your food.
