Make Ice Cream from Cottage Cheese

TikTok never disappoints in delivering creative and unusual recipes, and the next in a long line of viral recipe trends is cottage cheese ice cream. It might sound like an odd combination, but it is, in fact, quite delicious. Oh, and did we mention that you only need two ingredients? Here's how to make it.

Cottage Cheese Ice Cream Recipe

Making ice cream from cottage cheese might sound like a somewhat odd combination, but it is, in fact, delicious! It is also higher in protein and lower in fat than regular ice cream, and the best part? It only has two ingredients and is super simple to make. Here is a quick and easy recipe if you want to give it a go:

Ingredients:

  • 500g cottage cheese
  • 60ml honey or golden syrup (adjust to taste)
  • Optional: 1 tsp vanilla extract
  • Optional: frozen fruit

Instructions:

  1. If you're using any frozen fruit, place that in you blender or food processor first. Blend until you a bit of a smoother texture. Then add the cottage cheese. Blend until smooth and creamy.

  2. Add your sweetener of choice and vanilla extract (if using) and blend again until it is all combined.

  3. Taste and adjust sweetness and flavours to your preference.

  4. Transfer mixture to a freezer-safe container and cover tightly.

  5. Freeze for about 4 hours. If you want to avoid ice crystals forming, you can stir the mixture once every hour.

  6. Once frozen, let the ice cream sit at room temperature for a few minutes to soften before serving. Add you favourite toppings and sauces and enjoy!
