When deep-frying, it is important to use oils that are made for the high temperatures that occur during frying. Therefore hot-pressed oils are better suited than cold-pressed ones. The most common oils are canola oil, corn oil, sunflower oil and peanut oil- but there are more oils that will work as well.

It depends on what you cook and how long the fryer is just standing in between using it, but it is usually said that you can use a batch of oil about 7–12 times before it is time to change.
